The 2015 Cabernet Sauvignon is the product of an exceptional vintage from the Turners Crossing vineyard at Serpentine, Central Victoria.
This Cabernet Sauvignon has spent 16 months in quality French Oak, the entire parcel receiving an extended post ferment maceration.
Colour: Deep, dark crimson
Aroma: The wine offers intense, pure aromas of cassis, black olive and blackberry. Dried herbal elements add complexity.
Palate: The palate is rich and harmonious, expect blackberry, mulberry and ripe plums, with rich earthy notes finishing with soft but firm tannins.
Ageing: Ready to drink now, but will most likely continue to improve for 3-14 years.
The vintage: The key to this vintage was that there were no heat spikes and the season turned out to be cooler with a slower, longer ripening period. These conditions influenced the production of 'good to excellent' fruit, described as 'textbook' in some parts.
Food Friends: Cabernet Sauvignon is an ideal choice for the 'hearty-warm' meals of winter - pepper steak, roast lamb, beef bourguignon or lamb shanks with roast vegetables.
